Nc3 e3 is my favorite opening and it is not boring at all with the variety of responses it induces.

Additionally, it is a great weapon against higher rated players as they often haven't seen it much at a high level and there are many common themes that are easy to apply to your games!

I personally prefer 1.d4 nowadays because of how diverse it can be. You can follow theory and it's strong (B-tier), or you can play more creatively and not be punished by engine moves because others don't know theory (priceless)

I like 2N the most, it is very complicated and requires a high level of skill to play, so many different lines that are not trivial to punish , one of the very few openings that I actually like playing from both sides it is also one of the very few if not the only opening where white is aggressively playing for a win . Usually in other lines white takes material and tries to defend black's initiative or plays a positional game and hope to make less mistakes than black.

I've mained 1.e4 1.d4 for around 2 years until now (this is my alt). Personally, I think this opening is really straightforward and safe to play for the 1700-2100 range, since it provides good ways to develop your pieces. Not only that, there are very few variations to remember, giving you chance to learn and develop your own defense against those variations.
For black, I've been playing 1.e5 against knight opening players for a while since it's counterintuitive and fun to play, can easily throw players off guard within < 2100 range :)
