I'm curious what Insights on Lichess could tell us about players' tendency to capture just because you can, or something like that. (More likely I'll have to download PGNs to figure something like this out.)

That's an interesting thought, but I think it would be quite complex for AI to pick up reliably; especially as part of the overall computer analysis. In practice, it comes down to a player's own decision-making process. With every exchange, you need to ask yourself: What do I gain? What do I lose? Then weigh the pros and cons before committing. It's a habit that develops with time, but it's essential.
