Do you know the following Caro-Kann trap? 1. e4 c6 2. d4 d5 3. e5 c5 4. dxc5 Nc6 5. Nf3 Bg4 6. c3 Nxe5?? 7. Nxe5 Bxd1 8. Bb5+, you get the queen back and lead by at least one if not two pieces

No. You're confusing stuff here. All the moves above are written and memorized correctly.
In your third example, the more common trap is 5.O-O Nd4? 6.Bf7 Kf7 7.Ng5, where the tricky 7...Qg5 fails to 8.fg5 with check from the rook on f1.
